While we're on the subject of Summer hospitality, I thought we could share what kinds of iced teas we like. I like the regular old Lipton iced tea, but now that I sell teas myself, I have been able to experiment and taste some very good teas iced.

I have one called Raspberry Mint that is an herbal blend - no actual tea in it, so there is no caffeine. I make a concentrated tea out of it in the refrigerator overnight and then pour it over ice the next day. It is a beautiful deep pink color that looks so pretty in the sunlight! I usually like to sweeten herbal teas, but this one is pretty refreshing without sugar. If I were to sweeten it, I would put the sugar in the night before when I steep the tea in hot water before refrigerating it. Sugar does not dissolve in cold water very well.

Any others that you have tried? I'll post more later.

This is an old family recipe:

Add roughly 5 - 6 cups of water to a regular pot (not a teapot). Throw in 10 teabags (with tags cut off) of regular tea (any brand--caf or decaf). Bring the tea to a boil and shut off the heat; let the tea steep for a few hours, until it's cool enough to handle with your hands.

Once the tea has cooled, scoop out and squeeze the teabags into the pot to get out the excess moisture; discard the teabags. Pour the tea into a one-gallon container. Fill the container with water until the level rises to not quite the full gallon. Add about 1/3 cup each lemon juice and orange juice. Add 1 cup of sugar. Stir until all the sugar dissolves.
