Our kids have been gardening with a retired couple from our parish this summer. It's a great arrangement. The kids work with them on the garden, they love to garden but can't eat the fruits of their labor between the two of them, so we get most of what is grown. We are about to have tons of zuchinni. All my kids prefer me to do with it is make the chocoloate zuchinni bread Danielle Bean posted a recipe for last year. Whichis fabulous and I'm perfeclty happy to always have a loaf of this oh so yummy (and sneakily healthy) bread around, but I'd like to expand their horizons a little. Any ideas or tried and true kid friendly recipes?

Last night my kids made a wonderful vegetarian chili (great for Lent) for 4-H that uses all kinds of veggies (including zucchini) and was absolutely amazing!

Chop: 1 celery heart, 2 red peppers, 1 zucchini, 1 onion, 1/2 jalapeno pepper
In a big pot add some oil and start cooking celery & onion, adding peppers & zucchini after a few minutes.
Once that is all cooked nicely add:
3 - 28 oz can diced tomatoes
2 - 19 oz can of mixed beans
1 - 19 oz can of kidney beans
Mix well and let cook for about 1/2 hour on low boil.
Then add:
1 - 8 oz can corn
1/4 - 1/2 cup chili powder (depending on how you like it)
2 tsp cumin
2 tbsp salt
Let this cook down at a low boil (1/2 hr to 45 mins or so) and serve.
This was even better the next day!

This recipe can be modified with any type of veggie you have and is very flexible.
I love to saute zuchinni with onions in olive oil, add seasoned or plain feta cheese, and toss with cooked pasta. It's sooooo yummy.

Other ideas are to oven roast it with other veggies, or dice it and freeze with other chopped veggies to turn into soup on a cold day.

We love to grill zucchini sprinkled with a little Mrs. Dash seasoning and EVOO. So yummy! We also like to have zucchini cakes:

Ingredients:
2 cups shredded zucchini
1 egg
1 cup Italian seasoned breadcrumbs
1 teaspoon mustard
1 tablespoon light mayonnaise
1 tablespoon Old Bay seasoning

Preparation:
1. Preheat the oven to 350 degrees F; grease a baking sheet.
2. In a large bowl, combine the zucchini, egg, bread crumbs, mustard, light mayo and Old Bay seasoning.
3. Mix well and form into patties.
4. Bake for about 20 minutes on one side; turn the patties over and bake for 20 more minutes (or until golden brown). You can also fry them in a small amount of oil.


I also like to bread zucchini slices (dip in seasoned flour, egg wash, then italian bread crumbs with lots of parmesan added), and fry them in olive oil until crisp and brown. Sometimes I layer the breaded zucchini with mozzarella and sauce in a 8x8 pan and make zucchini parmesan.

My kids like all of the recipes.

Thanks for the ideas. They look great. We're going tomorrow to pick zuchinni so we'll be able to use these recipes soon.
Make zuchinni muffins. I'll have to see if I can dig up the recipe that my friend's mother gave me for my wedding. They're delicious. You can also cut them in to fry shapes, bread them and then fry them up and make zuchinni fries.
I think I planted too much zucchini, so I'm on the lookout for ways to preserve it without filling up my freezer! Anyone have a recipe for dried or canned zucchini, zucchini relish, etc.? Can you make sauerkraut with zucchini?
Zucchini Casserole:
In an 9x13 casserole dish layer:
Sliced, peeled zucchini
Sliced Tomato
Sliced Onion
Grated Cheddar Cheese
Repeat Above
Top with bread crumbs and some drizzled butter
Cover and Bake at 350 degrees for about 1- 1 1/2 hours

This is our family's favorite summer dinner!
My family and I love pasta. Sometimes I sautee zucchini and throw it into the pasta sauce. If your kids like spaghetti, this is a good way to make it even healthier without them noticing too much.
If you get too many Zucchini forming, just pluck off the blossoms--no fruit can develop. You'll get smart about how to control the growth for your use .
My favorite thing to do with zucchini... I love lasagna, so when I have a lot of zucchini, I slice it length wise, so I have thin long pieces, and I simply replace the noodles with the zucchini, and I must say it tastes better then regular lasagna. Try it you wont be disappointed, neither will your family.
Shred a couple very finely and throw them into your favorite muffin or cookie recipe.
Really. Chocolate chip zucchini cookies are a hit with our family of 9.
