we have cucumbers galore over here. i need ideas of what to do with them other than the usual salads. P.S. we don't like pickles :) thanks!

Have you ever eaten them as a cooked vegie? We do this in Germany sometimes. Just peel, slice lengthwise and remove seeds. Slice in 1/4-1/2 inch pieces and saute' in butter. Add a little vegie or chicken broth and season with salt and pepper. You can also add a little mustard. The cucumbers should have a little bite to them, so watch that it doesn't cook to long. Top off with a little cream and voila'! Tastes great with ground beef dishes.
Lucy, just one more thing... I think you can fill cucumbers and bake them, like stuffed pepper and zuchinni. Use a ground beef mixture or a rice mix.
Here's a recipe I have in my staff, but haven't tried yet. It's from FamilyFun Super Snacks.

Cherry Tomato & Cucumber Bites

1 8 oz package cream cheese, softened
¼ cup basil leaves, finely chopped
1 clove garlic, crushed
1 tablespoon parmesan cheese, grated (optional)
cucumbers & cherry tomatoes
fresh dill, optional
In a small mixing bowl, stir the cream cheese until smooth. Add the chopped basil, garlic, and parmesan, if desired, and stir until thoroughly combined. Set aside.

Score the sides of the cucumber, if desired with a zester, potato peeler or knife. Next, cut the cucumber into 1 in. thick rounds and carefully scoop out the insides with a baller.
Fill a pastry bag fitted with a star tip, or freezer bag with the tip snipped off, with the cream cheese. Squirt the cream cheese through the bag into the hollowed out cucumbers and tomatoes. Garnish with sprigs of fresh dill, if desired, and serve immediately.
Well, this is a salad, but it's a little different from the usual vinegar-based dressing. Mince some fresh ginger and stir it into sour cream mixed with lime juice and brown sugar. (I don't have the measurements, sorry-- I was experimenting.) Use this as a dressing for diced cucumbers, seeds removed. It is so darned good.
