I am so busy in the mornings trying to get kids fed and dressed, I rarely get breakfast in my own mouth. What are your favorite breakfasts? I am hoping to find protein-based recipes that are easy to make-ahead.

Actually breakfast burritos can be made ahead. I make large batches, wrap them in foil or wax paper and freeze them. Pop them in the toaster oven or microwave and you are done.

Pancakes might sound impossible, but they can actually be quite doable and healthy. I make mine from scratch and the batter is good for 3 days. I walk away while they cook. Also, they are pretty good when I cook a big batch and reheat them. Below is the recipe I use. I replace 1/2 the flour with whole wheat. I have added protein powder and increased the milk a little, but I found that the whole wheat is all it takes to fill us up and keep us going all morning (My boys eat 4-5 regular pancakes and 1-2 whole wheat ones)

2 c flour
2 t baking powder
1/4 t salt
1 T sugar
2 eggs
2 c milk
Our favorites are breakfast sandwiches made with either bagels or english muffins, topped with a microwaved egg, sausage and slice of cheese.
A fun fact I heard this week on a news report. People who began their day with egg whites ate 40% less during the day than people who ate something else for breakfast! I was shocked at that figure but it has something to do with the "bad hormones" that stimulate hunger and I guess the protein in egg whites keep those "at bay" all day long.
I started this higher-protein kick recently. I found that oatmeal has higher amounts of protein than almost all the ready to eat cereals. I have a bag of dried, mixed fruit that I throw in before I cook it.

Also, from my childhood, I love peanut butter toast. Especially if the bread is still hot so the peanut butter gets all melty. And a big glass of orange juice. Awesome.

Peanut butter toast is a staple around here. And, I do the boiled egg thing, too, as others have mentioned.
